This recipe is one of my favourites, it makes a very nice slice and is also great as mini muffins for the kids lunch boxes. 



  • 4 eggs
  • 80g melted butter or coconut oil
  • 1 - 2 Tbs raw honey or 1/8 tsp powdered stevia
  • 2 Tbs finely grated lemon rind.
  • Juice of two lemons
  • 1 1/2 cups coconut cream or natural yoghurt
  • 1 cup desiccated coconut
  • 2 tsp baking powder
  • 1/2 cup coconut flour or 1/4 cup coconut flour + 1/4 cup 180 Nutrition 100% Natural Protein Superfood (coconut)
  • 1 cup frozen raspberries

  • Extra raspberries for garnish (optional) 


  1. In  a large bowl beat eggs until light in colour, thick and fluffy (will take awhile but worth it).
  2. In a small pot slowly melt butter (or coconut oil) and honey until honey dissolves.
  3. Remove from heat and stir in coconut cream, lemon juice and rind.
  4. Sift coconut flour and baking powder into egg mixture, add desiccated coconut and butter mixture. 
  5. Gently fold until almost combined then add raspberries and continue mixing gently until completely combined, taking care to keep the air in the mixture.
  6. Transfer to a lined 20 x 30cm oven dish and bake 160c for 50 mins.



  • Alternatively line a mini muffin tray with muffin cases, fill muffin cases well (doesn't rise much).  Press a small raspberry into the top of each muffin.
  • Bake 160c for 20 - 30 mins. Will make at least 36 mini muffins. 
  • I put some of the mixture in a smaller oven tray and made slice and muffins - I like slice, kids like muffins!

Raspberry Coconut and Banana Muffins:

  • Take out the honey and lemon juice and add 2 small or 1 1/2 medium mashed bananas to the mixture (add in with melted butter) - these are delicious!!!
