Over summer when zucchini (and marrows) are in abundance this is a great alternative to a cauliflower pizza base and I actually enjoy it more.

Prep time: 20mins
Cook time: 40mins
Yield: 1 x 25cm pizza base

Ingredients:

  • 4 - 5 cups grated zucchini (I used 1/2 large marrow)
  • 1 large clove finely grated garlic
  • 1 egg
  • 1 heaped scoop Coconut 180Superfood (Alternatives: 1/3 cup GF flour or 1/3 cup ground linseed + 1 Tbs coconut flour)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
Added flavour options:
  • 1 tsp ground coriander
  • 1/2 tsp ground 
    Or
  • 2 Tbs tomato paste
  • 2 Tbs chopped basil leaves or 1tsp Italian herbs
    Or
  • Whatever you think will go with your chosen topping

Instructions:

STEP 1
Pre-heat oven to 180c with a pizza stone if you have one
Peel all of the green skin off the zucchini or marrow (not essential but you pizza base will be green if you don't do this - not a biggie but it is up to you)


STEP 2
If using a marrow, scoop out the seeds. 
Skip this step if using zucchini.

STEP 3

Cut into grate-able sized chunks

STEP 4
Finely grate using a grater or grating blade in a food processor 
Place into a bowl lined with a thin tea-towel or some muslin cloth

STEP 5
Squeeze as much liquid out as possible, sometimes massaging it around then re-squeezing helps to remove more juice.

STEP 6
Place zucchini and all other ingredients into a bowl and mix well (will still be quite wet but shouldn't be runny)

STEP 7
Tip mixture onto a piece of baking paper and press into a 25cm circle (should be about 1cm thick)

STEP 8
Bake for approx 40mins until firm - I find flipping it towards the end helps to cook it more evenly especially when using a pizza stone.

STEP 9
Cover with your favourite topping (make sure you cook any meat first)
Return to oven and cook for a further 15mins until cheese is melted and golden

Some Topping Options:

Tandoori Chicken, Plum and Brie (pictured at top)
  • On the base - caramelised onions (slice 4 onions cook slowly for about 30mins in 50g butter with 1 clove chopped garlic, 1/2 tsp cumin, 1 tsp coriander, 1Tbs finely grated ginger) or plum chutney (still working on my recipe)
  • Chicken breast marinated in yoghurt and tandoori spice (cooked)
  • Streaky bacon (cooked)
  • Cheese
  • Slices of Brie (put these on about 5 mins before removing from oven otherwise they melt and disappear)

Bacon and Pineapple

  • On the base - 2 Tbs tomato paste + a sprinkling of herbs
  • Diced onion
  • Diced bacon (can be raw)
  • Diced pineapple
  • Cheese

Peperoni

  • One the base - 2 Tbs tomato paste + 2 Tbs chopped thyme, oregano and basil leaves
  • Diced onion
  • Sliced preservative-free bier stick or salami
  • Sliced tomatoes
  • Sliced mushrooms
  • Cheese
  • Olives
  • Sprinkling of fresh basil leaves to serve

Tandoori Chicken, banana and Brie

  • On the base - caramelised onions (slice 4 onions cook slowly for about 30mins in 50g butter with 1 clove chopped garlic, 1/2 tsp cumin, 1 tsp coriander, 1Tbs finely grated ginger) or some mango chutney
  • Chicken breast marinated in yoghurt and tandoori spice (cooked)
  • Streaky bacon (cooked)
  • Cheese
  • Slices of Brie (put these on about 5 mins before removing from oven otherwise they melt and disappear)
  • Once cooked top with slices of banana
