Our kids love these, they make a great sweet lunch box treat.

Prep time: 10 mins

Cook time: 15mins

Serves: 20 bickies

 

Ingredients:

  • 1 cup spelt (I use a mix of white and wholemeal)
  • 60g butter softened
  • 1/4 - 1/3 cup coconut sugar
  • 1 egg
  • 2 tsp baking powder
  • 1 tsp natural vanilla extract
  • 1 tsp guar gum (optional but helps with consistency)
  • 12 squares chopped dark chocolate

Instructions:

  1. Put all ingredients in a bowl and beat with a wooden spoon until well mixed and fluffy(ish).
  2. Place spoonfuls onto a lined baking tray
  3. Bake 15 mins at 160c or until golden and firm to touch

Variations:

  • Use 1/2 cup spelt and 2 scoops 180 Coconut
  • Make choco, chocolate chippies by adding 1 Tbs cacao + 2 scoops 180 Chocolate (3/4 cup spelt)
